Description
This Garlic Roasted Potatoes recipe features tender baby gold potatoes roasted to golden perfection with fragrant minced garlic, olive oil, and a sprinkle of fresh herbs. Crispy on the outside and soft on the inside, these potatoes make a perfect side dish for any meal.
Ingredients
Scale
Potatoes
- 1 ½ pounds baby gold potatoes, scrubbed and dried
Seasoning
- 2 tablespoons extra virgin olive oil
- ¾ teaspoon kosher salt, divided
- ¼ teaspoon ground black pepper
- 6 cloves garlic, minced
- Chopped fresh chives or parsley, for serving (optional)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure even cooking.
- Prepare Potatoes: Cut the baby gold potatoes into halves or quarters depending on their size to ensure even roasting. Toss the potatoes with 2 tablespoons of olive oil, ½ teaspoon of kosher salt, and ¼ teaspoon of ground black pepper until they are well coated.
- First Roast: Arrange the potatoes cut-side down on the prepared baking sheet in a single layer. Roast for 35 minutes so they start to become tender and develop a golden crust.
- Add Garlic and Continue Roasting: Remove the baking sheet from the oven and sprinkle the minced garlic evenly over the potatoes. Toss the potatoes gently to mix the garlic throughout, then spread them back into an even layer. Rotate the pan for even browning and roast for an additional 5-10 minutes until the potatoes are golden brown and crispy.
- Finish and Serve: Toss the roasted potatoes with the remaining ¼ teaspoon kosher salt and chopped fresh chives or parsley if using. Let them cool slightly for a few minutes, then serve warm as a deliciously savory side dish.
Notes
- Use baby gold potatoes for the best texture and flavor, but Yukon gold or red potatoes work well too.
- Making sure the potatoes are cut into uniform sizes helps ensure even cooking.
- Adding garlic partway through roasting prevents it from burning and turning bitter.
- Fresh herbs like chives or parsley add a fresh, bright finish but can be omitted if unavailable.
- For extra crispiness, make sure the potatoes are spread in a single layer without overcrowding the pan.
