Description

A delicious twist on classic comfort food, this Grilled Cheese Burrito combines seasoned ground beef, creamy nacho cheese, and melty shredded cheeses wrapped in a warm flour tortilla, then grilled to a crispy, cheesy perfection. Perfect for a satisfying lunch or casual dinner, it blends bold Mexican flavors with the indulgent goodness of grilled cheese.

Ingredients

Scale

Beef Filling

  • 1 lb ground beef
  • 1 packet taco seasoning (or homemade blend)
  • 1 cup cooked white rice

Sauces and Cheese

  • 1/2 cup sour cream
  • 1/2 cup nacho cheese sauce
  • 1/4 cup chipotle sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese

Other

  • 4 large flour tortillas
  • Butter or oil for grilling

Instructions

  1. Cook the Beef: In a medium skillet over medium heat, brown the ground beef until fully cooked, about 8–10 minutes. Drain any excess grease. Add the taco seasoning packet and 1/4 cup water, then simmer for 5 minutes to let the flavors meld.
  2. Warm the Tortillas: Heat the flour tortillas on a dry skillet or microwave briefly to increase flexibility and prevent tearing during assembly.
  3. Assemble the Burrito: Lay a warmed tortilla flat and spread layers in this order: cooked white rice, seasoned beef, nacho cheese sauce, chipotle sauce, sour cream, then sprinkle shredded cheddar and mozzarella cheeses evenly on top.
  4. Grill the Burrito: Heat a clean skillet over medium heat. Sprinkle 2 tablespoons of shredded cheese directly onto the skillet. Place the assembled burrito seam-side down onto the skillet on top of the cheese. Grill until the cheese melts and forms a crispy crust, about 3–4 minutes. Carefully flip the burrito and repeat the process on the other side to create a golden, cheesy crust.

Notes

  • For extra crispiness, use butter instead of oil when grilling the burritos.
  • To make it spicier, add diced jalapeños or hot sauce to the filling.
  • Leftover burritos can be reheated in a skillet or oven to restore crispiness.
  • Use low-fat cheese and sour cream to reduce calories if desired.
  • Serve with guacamole or salsa for added flavor.
