Ingredients
Scale
Ground Beef Mixture
- 1 lb ground beef
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons olive oil (for cooking)
Roasted Sweet Potatoes
- 2 medium sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
Vegetables and Toppings
- 1 green bell pepper, chopped
- 1 cup Greek yogurt
- 2 tablespoons chopped fresh cilantro or parsley
Instructions
- Preheat the oven: Preheat your oven to 400°F (200°C) to prepare for roasting the sweet potatoes, which will develop a tender and slightly caramelized texture.
- Roast sweet potatoes: Toss the peeled and cubed sweet potatoes in olive oil, paprika, garlic powder, salt, and black pepper until evenly coated. Spread them out on a baking sheet in a single layer. Roast in the preheated oven for 20–25 minutes, flipping halfway through to ensure even browning.
- Sauté bell pepper: While the sweet potatoes roast, heat a little olive oil in a skillet over medium heat. Add the chopped green bell pepper and sauté until charred and tender, about 5–7 minutes. Remove from the skillet and set aside.
- Cook ground beef: In the same skillet, add the ground beef over medium-high heat. Break up the meat with a spatula as it cooks. Season with cumin, paprika, garlic powder, salt, and black pepper. Continue cooking until the beef is browned and crispy around the edges, about 8–10 minutes. Drain excess fat if needed.
- Assemble the power bowls: Divide the roasted sweet potatoes, sautéed bell peppers, and seasoned ground beef evenly among serving bowls. Add a scoop of creamy Greek yogurt in the center, then sprinkle with fresh chopped cilantro or parsley for a burst of flavor and freshness.
- Serve or store: Serve the power bowls immediately for the best texture and flavor. Alternatively, store the components separately in airtight containers for meal prep and reheat before eating.
Notes
- You can substitute ground turkey or chicken for the beef for a leaner option.
- Swap the green bell pepper for red or yellow for a sweeter taste.
- For extra crunch, add toasted pumpkin seeds on top.
- Use plain Greek yogurt for a creamy texture; flavored yogurts can alter the taste.
- Store leftovers in the fridge and consume within 3 days.
