Main Ingredients
- 1 egg
- 3/4 cup coconut sugar
- 1/2 cup Greek yogurt
- 1/2 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 2 cups almond flour
- 2 tablespoons vanilla protein powder
- 1 teaspoon baking powder
Optional
- 1 tablespoon sprinkles
Instructions
- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to ensure it reaches the right temperature while you prepare the batter.
- Mix Wet Ingredients: In a large bowl, combine the egg, coconut sugar, Greek yogurt, unsweetened applesauce, vanilla extract, and almond extract. Mix thoroughly until the mixture is smooth and fully combined.
- Add Dry Ingredients: Add the almond flour, vanilla protein powder, and baking powder to the wet mixture. Stir everything together until the batter is evenly combined with no lumps.
- Prepare Baking Pan: Line an 8×8-inch baking pan with parchment paper to prevent sticking. Spread the batter evenly into the pan using a spatula.
- Add Sprinkles (Optional): If desired, sprinkle 1 tablespoon of sprinkles evenly over the top of the batter and gently press them in so they adhere.
- Bake: Place the pan in the oven and bake the bars at 350°F for 20 minutes or until the edges are golden and a toothpick inserted in the center comes out clean.
- Cool and Serve: Remove the bars from the oven and let them cool for about 10 minutes. Use the parchment paper edges to lift the bars out of the pan, then cut into 12 bars and serve.
Notes
- Use almond flour for a gluten-free and nutritious base.
- You can substitute vanilla protein powder with your preferred protein powder for customization.
- The sprinkles are optional and add a fun decorative touch.
- Store bars in an airtight container at room temperature for up to 3 days or refrigerate to extend freshness.
- These bars are a healthier alternative to traditional sugar cookies, providing a good source of protein and less refined sugar.
