  • 1 cup breadcrumbs
  • 1 Tablespoon cornstarch
  • 1 teaspoon garlic salt
  • ½ teaspoon pepper
  • ½ teaspoon onion powder
  • ½ teaspoon dried parsley
  • ½ teaspoon thyme
  • ¼ teaspoon paprika

For the Chicken

  • 6 tablespoons olive oil (divided)
  • 5 chicken breasts


Instructions

  1. Preheat Oven: Preheat the oven to 400 degrees Fahrenheit to prepare for baking the chicken.
  2. Prepare Shake and Bake Mix: In a large Ziplock freezer bag, combine the breadcrumbs, cornstarch, garlic salt, pepper, onion powder, paprika, parsley, and thyme. Mix these dry ingredients thoroughly. Add 1 tablespoon of olive oil to the bag and mix until the mixture has a sandy texture.
  3. Coat Chicken with Oil: Pour the remaining 5 tablespoons of olive oil into a shallow bowl or plate. Dip each chicken breast in the olive oil so it is coated evenly.
  4. Coat Chicken with Mix: Place each oiled chicken breast into the Ziplock bag one at a time. Seal the bag and squish it around to coat the chicken well with the shake and bake mix. For a thicker crust, repeat the oil coating and shake and bake coating steps for each piece.
  5. Arrange on Baking Sheet: Place the coated chicken breasts on a foil-lined baking sheet. Use two pans if needed to avoid crowding the chicken pieces.
  6. Bake the Chicken: Bake the chicken for approximately 45 minutes or until the internal temperature reaches 165 degrees Fahrenheit, ensuring the chicken is fully cooked.
  7. Rest the Chicken: Remove the chicken from the oven and transfer it to a cooling rack to prevent the bottoms from becoming soggy. Allow the juices to drain beneath the chicken while resting.

  • For extra crispy breading, double coat the chicken with olive oil and shake and bake mix.
