Description
Sweet and savory Honey Butter Thyme Glazed Carrots made effortlessly in a crockpot. Tender carrots are slow-cooked with honey, butter, dried thyme, and sea salt to create a luscious glaze that’s perfect as a side dish for any meal.
Ingredients
Scale
Carrots
- 1.5 pounds carrots, peeled, trimmed, and cut into 1.5 inch pieces
Glaze
- 4 tablespoons honey
- 4 tablespoons butter, cubed
- 1 teaspoon dried thyme
- 1/2 teaspoon fine sea salt
Instructions
- Combine Ingredients: Place the prepared carrots, honey, cubed butter, dried thyme, and sea salt into a 3.5 to 4 quart slow cooker, ensuring all ingredients are evenly distributed.
- Cook on High: Set the slow cooker to HIGH and cook for 3 hours. After about 15-30 minutes, once the butter has melted, lightly shake the crockpot without removing the lid to coat all the carrots evenly with the glaze.
- Thicken the Glaze: Remove the lid and continue cooking for another 10-15 minutes, stirring occasionally with a wooden spoon, until the glaze thickens and coats the carrots beautifully.
Notes
- For best results, use a slow cooker between 3.5 to 4 quarts in size.
- Do not remove the lid during the initial cooking phase except to shake gently to keep carrots coated.
- Thickening the glaze at the end enhances the flavor and texture, creating a shiny finish.
- This dish pairs well with roasted meats or as part of a holiday dinner spread.
- Carrots can be cut smaller if faster cooking is desired, but adjust cooking times accordingly.
