Ingredients

Scale

Vegetables

  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 large onion, chopped

Protein

  • 1 lb kielbasa, sliced into 1/4 inch pieces

Sauce & Seasoning

  • 2 tablespoons olive oil (divided)
  • 4 cloves garlic, minced
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste
  • Optional: fresh parsley for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to get it ready for roasting the vegetables and kielbasa.
  2. Prepare Vegetables: In a large mixing bowl, combine the chopped red, yellow, and green bell peppers along with the chopped onion. Drizzle with 1 tablespoon of olive oil and toss to coat evenly. Spread the vegetables on a large baking sheet.
  3. Prepare Kielbasa: Using the same bowl, add the sliced kielbasa and drizzle with the remaining 1 tablespoon olive oil. Toss to coat the kielbasa slices evenly, then spread them on top of the vegetables on the baking sheet.
  4. Initial Roasting: Place the baking sheet in the preheated oven and roast for 20 minutes, stirring halfway through to promote even cooking and caramelization.
  5. Make Honey Garlic Sauce: While roasting, whisk together minced garlic, honey, soy sauce, and apple cider vinegar in a small bowl to create the flavorful sauce.
  6. Glaze with Sauce: After 20 minutes, remove the baking sheet from the oven. Drizzle the prepared honey garlic sauce over the kielbasa and vegetables, then toss everything to coat evenly.
  7. Final Roasting: Return the baking sheet to the oven and roast for an additional 10 to 15 minutes until the vegetables are tender and the kielbasa is nicely caramelized.
  8. Season and Garnish: Remove from the oven, season with salt and pepper to taste, and if desired, garnish with freshly chopped parsley for added freshness and color.
  9. Serve: Serve warm and enjoy this deliciously sweet and savory kielbasa and vegetable dish.

Notes

  • You can substitute kielbasa with smoked sausage or another favorite sausage variety.
  • Adjust the amount of honey in the sauce for your preferred level of sweetness.
  • For a gluten-free option, ensure the soy sauce used is gluten-free.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • Reheat in the oven or on the stovetop to maintain crispness of the vegetables and sausage.
