Vegetables
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 green bell pepper, chopped
- 1 large onion, chopped
Protein
- 1 lb kielbasa, sliced into 1/4 inch pieces
Sauce & Seasoning
- 2 tablespoons olive oil (divided)
- 4 cloves garlic, minced
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
- Optional: fresh parsley for garnish
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to get it ready for roasting the vegetables and kielbasa.
- Prepare Vegetables: In a large mixing bowl, combine the chopped red, yellow, and green bell peppers along with the chopped onion. Drizzle with 1 tablespoon of olive oil and toss to coat evenly. Spread the vegetables on a large baking sheet.
- Prepare Kielbasa: Using the same bowl, add the sliced kielbasa and drizzle with the remaining 1 tablespoon olive oil. Toss to coat the kielbasa slices evenly, then spread them on top of the vegetables on the baking sheet.
- Initial Roasting: Place the baking sheet in the preheated oven and roast for 20 minutes, stirring halfway through to promote even cooking and caramelization.
- Make Honey Garlic Sauce: While roasting, whisk together minced garlic, honey, soy sauce, and apple cider vinegar in a small bowl to create the flavorful sauce.
- Glaze with Sauce: After 20 minutes, remove the baking sheet from the oven. Drizzle the prepared honey garlic sauce over the kielbasa and vegetables, then toss everything to coat evenly.
- Final Roasting: Return the baking sheet to the oven and roast for an additional 10 to 15 minutes until the vegetables are tender and the kielbasa is nicely caramelized.
- Season and Garnish: Remove from the oven, season with salt and pepper to taste, and if desired, garnish with freshly chopped parsley for added freshness and color.
- Serve: Serve warm and enjoy this deliciously sweet and savory kielbasa and vegetable dish.
