Instructions
- Preheat and Prepare Zucchini: Preheat your oven to 400°F (200°C). Lightly brush both sides of the zucchini slices with olive oil and season evenly with salt and black pepper. Arrange the slices on a baking sheet in a single layer.
- Roast Zucchini: Roast the zucchini slices in the oven for 10 to 12 minutes until they are just tender but still hold their shape.
- Mix Cheese Filling: While the zucchini roasts, combine ricotta cheese, grated Parmesan, garlic powder, and dried oregano in a small bowl. Mix until smooth and well combined.
