Ingredients
Scale
Broccoli Mixture
- 24 ounces broccoli florets (1½ pounds)
- 2-3 tablespoons olive oil
- 2 cloves garlic, minced
- 2 tablespoons lemon juice (from 1 lemon)
- Salt and pepper, to taste
- ¼ cup freshly grated Parmesan cheese (half of ½ cup)
Toppings
- ¼ cup freshly grated Parmesan cheese (remaining half of ½ cup)
- 2 whole lemons, cut into wedges
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) and spray a baking sheet with nonstick spray to prevent sticking. Set the baking sheet aside while you prepare the broccoli mixture.
- Mix Ingredients: In a large bowl, combine the broccoli florets, olive oil, minced garlic, lemon juice, salt, pepper, and half of the freshly grated Parmesan cheese. Toss thoroughly to ensure all the broccoli pieces are evenly coated with the flavors.
- Arrange for Roasting: Spread the broccoli in a single layer on the prepared baking sheet. Place the lemon wedges around the broccoli as desired to infuse additional lemon flavor while roasting.
- Roast Broccoli: Place the baking sheet in the preheated oven and roast for 12-14 minutes, or until the broccoli is tender and has crispy edges, checking for your preferred doneness.
- Finish & Serve: Remove the roasted broccoli from the oven and immediately sprinkle with the remaining Parmesan cheese. Optionally, squeeze the roasted lemon wedges over the broccoli for an extra burst of tangy flavor before serving.
Notes
- You can adjust the lemon juice quantity to your personal taste for more or less tanginess.
- For a nuttier flavor, try using Pecorino Romano cheese instead of Parmesan.
- Roasting time may vary slightly depending on your oven; watch closely to avoid burning.
- This dish pairs wonderfully with grilled meats, fish, or as a standalone vegetarian side.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheat well in an oven or skillet.
