Broccoli
- 2 medium to large heads of broccoli (about 1 kg / 2 lb)
Seasoning
- 2 garlic cloves, finely sliced or minced
- 2 1/2 tbsp extra virgin olive oil
- 1/2 tsp salt (adjust to your taste)
- Black pepper, to taste
- Zest of half a lemon
- 1 tbsp lemon juice
- 2 tbsp freshly grated parmesan cheese, plus more for garnish
Instructions
- Preheat Oven: Preheat your oven to 220°C/425°F (200°C fan) to ensure it is hot enough for roasting the broccoli perfectly.
- Prepare Broccoli: Cut or break the broccoli into florets. You can also include the stem peeled and sliced if desired. Arrange the florets on a baking tray.
- Toss with Seasoning: Drizzle the broccoli with extra virgin olive oil, scatter the finely sliced garlic, sprinkle with salt and black pepper. Toss using your fingers or tongs to evenly coat all pieces. Spread the broccoli florets out in a single layer on the tray.
- Roast Broccoli: Roast in the preheated oven for 20 to 25 minutes until the tips of the florets turn slightly brown and crispy. The broccoli should be tender-crisp, cooked through but not soft or floppy.
- Finish and Serve: Remove the tray from the oven. Immediately drizzle lemon juice over the hot broccoli, sprinkle lemon zest and freshly grated parmesan. Toss quickly to combine, transfer to a serving plate, garnish with additional parmesan, and serve warm.
