Ingredients
Scale
Chocolate Mixture
- 250 g dark chocolate
- 200 g milk chocolate
- 200 g butter
- 150 g golden syrup
Fillings
- 100 g malted milk biscuits, broken into pieces
- 75 g mini marshmallows
- 200 g Maltesers
Instructions
- Prepare the tin: Line an 8-inch square baking tin with baking paper and lightly grease it to prevent sticking.
- Melt the chocolate mixture: In a saucepan over low heat, gently melt the butter, golden syrup, dark chocolate, and milk chocolate together, stirring continuously until smooth. Remove from heat and let it cool for 10 minutes.
- Combine the fillings: In a large mixing bowl, add the broken malted milk biscuits, mini marshmallows, and Maltesers.
- Mix with chocolate: Pour two-thirds of the cooled chocolate mixture over the dry ingredients and stir well until everything is fully coated.
- Transfer to tin: Spoon the mixture into the prepared tin and smooth down the surface with a spatula. Pour the remaining chocolate mixture over the top if desired for an extra chocolate layer.
- Add topping: Scatter extra Maltesers on top and gently tap the tin on the countertop to release any trapped air bubbles.
- Chill to set: Place the tin in the fridge and chill for at least 3 to 4 hours or overnight until the rocky road has fully set.
- Serve: Once firm, remove from the tin, slice into 12 pieces, and enjoy your Maltesers Rocky Road.
Notes
- Use an 8-inch square tin for ideal thickness and portion size.
- Letting the chocolate mixture cool slightly before mixing with the dry ingredients prevents melting the marshmallows.
- For a gluten-free version, substitute malted milk biscuits with gluten-free biscuits.
- Store leftovers in an airtight container in the fridge for up to one week.
- For added crunch, consider adding chopped nuts such as hazelnuts or almonds.
