Description

Maltesers Rocky Road is a decadent no-bake dessert combining the rich flavors of dark and milk chocolate with crunchy malted biscuits, chewy mini marshmallows, and crispy Maltesers. This easy-to-make treat is perfect for sharing and requires minimal preparation, chilling until firm to create a delightful combination of textures and flavors.

Ingredients

Scale

Chocolate Mixture

  • 250 g dark chocolate
  • 200 g milk chocolate
  • 200 g butter
  • 150 g golden syrup

Fillings

  • 100 g malted milk biscuits, broken into pieces
  • 75 g mini marshmallows
  • 200 g Maltesers

Instructions

  1. Prepare the tin: Line an 8-inch square baking tin with baking paper and lightly grease it to prevent sticking.
  2. Melt the chocolate mixture: In a saucepan over low heat, gently melt the butter, golden syrup, dark chocolate, and milk chocolate together, stirring continuously until smooth. Remove from heat and let it cool for 10 minutes.
  3. Combine the fillings: In a large mixing bowl, add the broken malted milk biscuits, mini marshmallows, and Maltesers.
  4. Mix with chocolate: Pour two-thirds of the cooled chocolate mixture over the dry ingredients and stir well until everything is fully coated.
  5. Transfer to tin: Spoon the mixture into the prepared tin and smooth down the surface with a spatula. Pour the remaining chocolate mixture over the top if desired for an extra chocolate layer.
  6. Add topping: Scatter extra Maltesers on top and gently tap the tin on the countertop to release any trapped air bubbles.
  7. Chill to set: Place the tin in the fridge and chill for at least 3 to 4 hours or overnight until the rocky road has fully set.
  8. Serve: Once firm, remove from the tin, slice into 12 pieces, and enjoy your Maltesers Rocky Road.

Notes

  • Use an 8-inch square tin for ideal thickness and portion size.
  • Letting the chocolate mixture cool slightly before mixing with the dry ingredients prevents melting the marshmallows.
  • For a gluten-free version, substitute malted milk biscuits with gluten-free biscuits.
  • Store leftovers in an airtight container in the fridge for up to one week.
  • For added crunch, consider adding chopped nuts such as hazelnuts or almonds.
