Description

These Meatball Smash Tacos are a delicious fusion twist on classic tacos. Juicy meatballs are smashed onto tortillas, topped with marinara sauce and melted mozzarella cheese, creating a flavorful and satisfying meal.

Meatballs:

  • 1 pound ground beef (80/20)
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Additional Ingredients:

  • 8 small flour tortillas
  • 1 cup marinara sauce, warmed
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley, chopped (optional)
  • Olive oil or cooking spray, for cooking


Instructions

  1. Prepare Meatballs: In a bowl, mix ground beef, Parmesan cheese, garlic, Italian seasoning, salt, and pepper. Form into 8 balls.
  2. Cook Meatballs: Flatten a meatball on a tortilla on a hot skillet. Cook until browned, then flip and cook tortilla side until crispy.
  3. Assemble Tacos: Top each taco with marinara sauce and mozzarella. Melt cheese, then garnish with basil or parsley. Serve hot.

Notes

  • For a spicier version, add crushed red pepper to the beef mix or use spicy marinara.
