Meatballs:
- 1 pound ground beef (80/20)
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Additional Ingredients:
- 8 small flour tortillas
- 1 cup marinara sauce, warmed
- 1 cup shredded mozzarella cheese
- Fresh basil or parsley, chopped (optional)
- Olive oil or cooking spray, for cooking
Instructions
- Prepare Meatballs: In a bowl, mix ground beef, Parmesan cheese, garlic, Italian seasoning, salt, and pepper. Form into 8 balls.
- Cook Meatballs: Flatten a meatball on a tortilla on a hot skillet. Cook until browned, then flip and cook tortilla side until crispy.
- Assemble Tacos: Top each taco with marinara sauce and mozzarella. Melt cheese, then garnish with basil or parsley. Serve hot.
Notes
- For a spicier version, add crushed red pepper to the beef mix or use spicy marinara.
- These are great with a side of Caesar salad or garlic fries.
- You can also broil the tacos briefly to melt the cheese more evenly.
