- 1 cup Medjool dates, pitted
- 1 cup raw almonds (or cashews or walnuts)
- 3 tablespoons unsweetened cocoa powder
- 1 tablespoon chia seeds
- 1 tablespoon flaxseed meal (optional)
- 1/2 teaspoon vanilla extract
- Pinch of sea salt

- 1–2 tablespoons water, as needed
- Unsweetened shredded coconut or cocoa powder for rolling (optional)
Instructions
- Grind the Nuts: Place the raw almonds into a food processor and pulse until they become finely ground but not turning into nut butter. This creates the base texture for the bliss balls.
- Add Remaining Ingredients: Add the pitted Medjool dates, unsweetened cocoa powder, chia seeds, flaxseed meal (if using), vanilla extract, and a pinch of sea salt to the food processor.
- Blend Together: Process the mixture until it becomes sticky and clumps together. If the mixture seems dry and crumbly, add water one tablespoon at a time and pulse until it can hold together when pressed.
- Shape the Balls: Scoop out small portions of the mixture and roll them between your palms into bite-sized balls.
- Optional Coating: Roll the bliss balls in shredded coconut or cocoa powder for added texture and flavor, if desired.
- Chill and Store: Place the bliss balls in the refrigerator for at least 30 minutes to firm up before serving. Store in an airtight container in the fridge for up to 1 week or freeze for longer storage.
