Description

The MexiMelt is a quick and flavorful Tex-Mex inspired main course featuring seasoned ground beef wrapped in soft flour tortillas with melted cheddar and Monterey Jack cheeses. This easy stovetop recipe delivers a melty, cheesy, and savory wrap perfect for a satisfying meal, customizable with pico de gallo, hot sauce, or jalapeños for added heat.

Ingredients

Scale

Filling

  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • â…” cup water

Wrap and Toppings

  • 8 small flour tortillas (6-inch)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • ½ cup pico de gallo (or finely chopped tomato and onion mix)
  • Optional hot sauce or jalapeños for heat

Instructions

  1. Cook the ground beef: In a skillet over medium heat, brown the ground beef until fully cooked, breaking it up as it cooks to ensure even cooking. Drain any excess grease to keep the filling from being too oily.
  2. Season the beef: Add the taco seasoning mix and water to the cooked beef, stirring well to combine. Reduce heat and let it simmer for 5 to 7 minutes until the mixture thickens and flavors meld together.
  3. Warm the tortillas: Heat the flour tortillas until soft and pliable, either in a microwave or a dry skillet. This step makes folding or rolling easier without cracking.
  4. Assemble the MexiMelts: Place a spoonful of the seasoned beef mixture along the center of each tortilla. Top with a combined layer of shredded cheddar and Monterey Jack cheeses, then add a spoonful of pico de gallo.
  5. Fold or roll: Fold each tortilla in half or roll burrito-style around the filling, securing the contents inside.
  6. Melt the cheese: For a melty finish, wrap each filled tortilla in a damp paper towel and microwave for 20 to 30 seconds, or place the tortilla seam-side down in a warm skillet for 1 to 2 minutes until the cheese melts and the wrap is warm throughout.
  7. Serve hot: Serve immediately while warm, optionally adding sour cream, guacamole, or spicy salsa for extra flavor.

Notes

  • Customize your MexiMelts with sour cream, guacamole, or spicy salsa for added flavor and texture.
  • For a vegetarian version, substitute the ground beef with black beans or plant-based crumbles to keep it hearty and delicious.
  • Use fresh pico de gallo or your favorite salsa for the best authentic taste.
  • To add extra heat, incorporate sliced jalapeños or your favorite hot sauce either inside the wrap or as a topping.
