Filling

- 1/4 teaspoon nutmeg
- 1 tablespoon all-purpose flour
- 1 tablespoon lemon juice

Instructions
- Preheat Oven and Prepare Tin: Preheat your oven to 375°F (190°C) and lightly grease a muffin tin to prevent sticking.
- Cut Pie Crust Circles: Roll out the pie crusts and use a 4-inch round cutter to cut out 12 circles. Gently press each circle into the muffin tin cups, ensuring the crust goes up the sides to create mini pie shells.
- Make the Apple Filling: In a medium bowl, combine the finely chopped apples with lemon juice, granulated sugar, brown sugar, ground cinnamon, nutmeg, and all-purpose flour. Toss everything until the apples are well coated with the mixture.
- Fill the Pie Shells: Spoon the apple filling evenly into each prepared pie crust, filling them generously.
- Add Decorative Toppings: Optionally, cut small strips or shapes from the leftover pie dough to create lattices or decorative tops for each mini pie.
- Apply Egg Wash and Add Sugar: Brush the tops of the pies with the beaten egg wash to achieve a golden color. Sprinkle coarse sugar over the top if desired for extra crunch and sweetness.
- Bake: Bake the mini pies for 20 to 25 minutes, or until the crusts are golden brown and the apples inside are tender.
