Description

These Mochi Cookies are a delightful fusion treat that combines the chewy texture of mochi with the sweet indulgence of chocolate chip cookies. With a gooey mochi center surrounded by a soft cookie exterior, these cookies offer a unique and delicious twist on a classic favorite.

Ingredients

Scale

For the Mochi:

  • 1 cup glutinous rice flour (mochiko)
  • 1/4 cup sugar
  • 1/2 cup whole milk
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

For the Cookie Dough:

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/3 cup unsalted butter, softened
  • 1 large egg
  • 1/2 cup chocolate chips or chopped chocolate

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Microwave the Mochi: In a microwave-safe bowl, whisk together the glutinous rice flour, sugar, milk, melted butter, vanilla, and salt. Microwave until a sticky, mochi-like dough forms.
  3. Prepare the Cookie Dough: Cream softened butter with brown and granulated sugars. Mix in the egg, then add flour and baking powder. Fold in chocolate chips.
  4. Assemble the Cookies: Form cookie dough balls with mochi centers, then place on the baking sheet.
  5. Bake: Bake for 10–12 minutes until lightly golden. Cool on a wire rack.

Notes

  • Use gloves or lightly oiled hands when handling mochi dough to prevent sticking.
  • For extra flavor, try matcha in the mochi or add cocoa powder to the cookie dough.
  • These cookies are best enjoyed warm for maximum chewiness.
