Beef Marinade

  • 3 cups cooked jasmine or long-grain rice, preferably chilled
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 medium yellow onion, sliced
  • 2 green onions, chopped
  • 2 garlic cloves, minced
  • 2 eggs, beaten
  • Salt and black pepper to taste


Instructions

  1. Marinate the Beef: In a small bowl, toss the thinly sliced beef with 1 tablespoon soy sauce. Let it marinate for about 10 minutes to absorb the flavors.
  2. Sear the Beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef and sear for 2 to 3 minutes until browned but not fully cooked. Remove the beef from the pan and set it aside.
  3. Cook Onions and Garlic: In the same pan, add the sliced yellow onion and cook for 3 to 4 minutes until they become soft and lightly caramelized. Add the minced garlic and cook for an additional 30 seconds to release its aroma.
  4. Scramble the Eggs: Push the onions and garlic to one side of the pan. Pour the beaten eggs into the empty side and scramble them until just set. Then mix the scrambled eggs with the onions and garlic.
  5. Add the Rice and Sauces: Add the chilled cooked rice to the pan, breaking up any clumps. Stir in the remaining 1 tablespoon of soy sauce, oyster sauce, and 1 teaspoon sesame oil. Mix well to combine all ingredients.
  6. Combine the Beef: Return the seared beef to the pan and toss everything together. Cook just until heated through, about 1 to 2 minutes. Taste and season with salt and black pepper as needed.
  7. Garnish and Serve: Remove from heat, garnish with chopped green onions, and serve hot.
