Ingredients
Scale
Beets
- 1 lb. golden beets, peeled and cut into ½-inch cubes
- 1 lb. purple beets, peeled and cut into ½-inch cubes
- 3 Tbsp. olive oil
- ¼ tsp. salt
Honey Ricotta
- ½ cup ricotta cheese
- ¼ tsp. salt
- 1 Tbsp. honey
- 1 tsp. fresh rosemary, finely chopped (plus more for garnish)
Instructions
- Preheat Oven: Preheat your oven to 375 degrees Fahrenheit to prepare for roasting the beets.
- Prepare Beets: Place the peeled and cubed golden and purple beets into a large zip-top bag with olive oil and ¼ teaspoon salt. Seal and shake the bag to evenly coat the beets with oil and salt.
- Roast Beets: Spread the coated beets evenly on a parchment paper-lined baking sheet. Roast in the preheated oven for 35-40 minutes, flipping the beets halfway through to ensure even cooking and caramelization.
- Make Honey Ricotta: While the beets roast, combine ricotta cheese, ¼ teaspoon salt, honey, and finely chopped rosemary in a medium bowl. Whisk until the mixture is smooth and well blended. Refrigerate until ready to serve.
- Serve: Once the beets are tender and roasted, serve them warm topped with a generous spoonful of the honey ricotta mixture and garnish with additional fresh rosemary. Enjoy this flavorful and elegant dish!
Notes
- Peeling beets is easier using gloves to avoid staining your hands.
- For extra flavor, toss beets with a splash of balsamic vinegar before roasting.
- Honey ricotta can be made a few hours ahead and chilled to allow flavors to meld.
- For a vegan option, substitute ricotta with a plant-based alternative and use maple syrup instead of honey.
- Roasting time may vary depending on beet size; check tenderness by piercing with a fork.
