Peach Jello Layers

  • 2 pkgs. (6 oz each) peach jello, prepared according to package instructions
  • 1 cup boiling hot water
  • 1 cup cold water (or ice water to cool faster)

Cream Layer

  • 2 packets unflavored gelatin (14 grams or 1 1/2 Tbsp)
  • 1 cup boiling hot water
  • 1 cup cold water
  • 14 oz can sweetened condensed milk

Fruit Layer

  • 15 oz can sliced peaches, cut into 1/2″ thick slices

Instructions

  1. Prepare the first peach jello layer: Make the first package of peach-flavored jello according to the package instructions, substituting 2 cups of ice water for faster cooling. Pour the mixture into a 9×13 glass pan and refrigerate for 1 to 2 hours, or until fully set.
  2. Make the cream layer: After the first jello layer has been in the fridge at least 45 minutes, dissolve 2 packets of unflavored gelatin in 1 cup boiling water, stirring thoroughly. Add 1 cup cold water and then stir in the sweetened condensed milk until well blended. Let this cream mixture sit at room temperature for no longer than 45 minutes.
  3. Layer the cream on top of the jello: Gently pour the cream layer over the set peach jello layer in the casserole dish. Place back in the refrigerator to allow it to begin setting, approximately 5 minutes.
  4. Add the peach slices: When the cream layer is nearly set but still slightly soft (about 5 minutes in the fridge), carefully arrange the peach slices on top. This timing ensures the peaches stay in place and do not float. Return the dish to the refrigerator to fully set the cream and fruit layer.
  5. Prepare the second peach jello layer: Immediately after placing the cream layer in the fridge, prepare the second package of peach jello following package instructions. Allow it to cool to room temperature, using ice water to speed the process if desired (approximately 30 minutes).
  6. Top the dessert with the final jello layer: Gently pour the cooled peach jello over the set peaches and cream layer, taking care to avoid pouring warm jello which can melt the layers beneath. Refrigerate the entire dessert until fully set before serving.
