Cheesecake Batter

  • 3 packages Cream Cheese (8 ounces each), softened
  • 1/2 cup Heavy Whipping Cream
  • 1 tablespoon Vanilla Extract
  • 1 cup Powdered Sugar
  • 1/2 cup Sugar
  • 1 teaspoon Lemon Juice
  • 1 drop Peppermint Flavoring (for red batter)
  • Red Food Coloring Gel, about 5-6 drops

Instructions

  1. Prepare Oreo Base: Crush the entire package of Mini Oreos into fine crumbs and layer them evenly at the bottom of each parfait glass. Set aside while preparing the batter.
  2. Combine Cream Cheese and Cream: In the bowl of a stand mixer, add the softened cream cheese and heavy whipping cream. Begin mixing on low speed to combine the ingredients thoroughly.
  3. Whip Until Fluffy: Increase the mixer speed to high and whip for about one minute or until the mixture becomes creamy and fluffy in texture.
  4. Scrape and Mix: Scrape down the sides of the mixing bowl with a spatula to ensure uniform consistency, then mix again briefly.
  5. Add Vanilla Extract: Pour in the vanilla extract and mix to incorporate it evenly into the batter.
  6. Add Sugar and Lemon Juice: Add the granulated sugar and lemon juice, then blend until the mixture is smooth and all ingredients are fully combined.
  7. Incorporate Powdered Sugar: Add the powdered sugar and mix on low speed until blended. Scrape down the bowl sides again and continue mixing until evenly combined.
  8. Divide Batter: Remove half of the cheesecake batter and place it into a small separate bowl. This will be the white batter portion.
  9. Flavor Red Batter: To the remaining batter in the mixer bowl, add one drop of peppermint flavoring. Mix well to blend the flavor evenly throughout.
  10. Add Red Food Coloring: Incorporate approximately 5-6 drops of red food coloring gel into the peppermint-flavored batter, mixing until the color is uniform with no white streaks remaining.
  11. Prepare Plastic Wrap: Tear off a piece of plastic wrap approximately 10-12 inches wide and lay it flat on the counter.
  12. Pipe White Batter Ribbon: Using a spatula or spoon, spread a long ribbon of white cheesecake batter onto the plastic wrap.
  13. Pipe Red Batter Ribbon: Next to the white ribbon, spread a long ribbon of red peppermint batter on the plastic wrap.
  14. Roll Batter Ribbon: Carefully roll the plastic wrap around the two ribbons of batter, folding ends up to create a neat tube of layered batter.
  15. Trim and Place in Pastry Bag: Cut off one end of the rolled plastic wrap and insert it into a pastry bag fitted with a tip for piping.
  16. Pipe into Glasses: Pipe the swirled cheesecake batter on top of the Oreo crumbs in each parfait glass in a swirling motion, finishing in a pointed peak at the top.
  17. Garnish Parfaits: Place a peppermint stick on the side of each glass and sprinkle the top with colored sprinkles for added holiday flair.
  18. Add Snowman Face Decoration: Attach the snowman face decoration on the opposite side of the glass as shown in the photo to complete the look.
