- ½ cup plain mashed potatoes, cooled
- ½ cup salted butter, softened
- 7 cups powdered sugar (plus extra for rolling)

Instructions
- Mix dough ingredients. In a large bowl, combine the cooled mashed potatoes, softened butter, vanilla extract, and 1 cup of powdered sugar using an electric mixer until well blended.
- Add remaining sugar. Gradually add the remaining powdered sugar, about 1 cup at a time, mixing thoroughly after each addition until the dough is no longer sticky and has a playdough-like consistency.
- Chill dough. Cover the dough and refrigerate it for 1 hour to firm up slightly.
- Divide dough. Remove dough from refrigerator and split it evenly into two halves for easier rolling.
- Roll out dough. Lightly dust a parchment-lined surface with powdered sugar and roll each half of the dough into a rectangle approximately ¼ inch thick, working quickly to prevent crumbling.
- Spread peanut butter. Spread half of the creamy peanut butter evenly over the rolled-out dough rectangle.
- Roll into log. Starting from one of the longer edges, carefully roll the dough up tightly using the parchment paper to help guide it into a log shape.
- Wrap and chill. Wrap the log tightly in parchment paper and place it in the refrigerator for 1 hour to set.
- Repeat process. Repeat the rolling, filling, and chilling steps with the second half of dough and remaining peanut butter.
- Slice into pieces. Once chilled, unwrap the logs and slice them into approximately ½ inch thick pieces to serve.
