  • 7 cups powdered sugar (plus extra for rolling)

Instructions

  1. Mix dough ingredients. In a large bowl, combine the cooled mashed potatoes, softened butter, vanilla extract, and 1 cup of powdered sugar using an electric mixer until well blended.
  2. Add remaining sugar. Gradually add the remaining powdered sugar, about 1 cup at a time, mixing thoroughly after each addition until the dough is no longer sticky and has a playdough-like consistency.
  3. Chill dough. Cover the dough and refrigerate it for 1 hour to firm up slightly.
  4. Divide dough. Remove dough from refrigerator and split it evenly into two halves for easier rolling.
  5. Roll out dough. Lightly dust a parchment-lined surface with powdered sugar and roll each half of the dough into a rectangle approximately ¼ inch thick, working quickly to prevent crumbling.
  6. Spread peanut butter. Spread half of the creamy peanut butter evenly over the rolled-out dough rectangle.
  7. Roll into log. Starting from one of the longer edges, carefully roll the dough up tightly using the parchment paper to help guide it into a log shape.
  8. Wrap and chill. Wrap the log tightly in parchment paper and place it in the refrigerator for 1 hour to set.
  9. Repeat process. Repeat the rolling, filling, and chilling steps with the second half of dough and remaining peanut butter.
  10. Slice into pieces. Once chilled, unwrap the logs and slice them into approximately ½ inch thick pieces to serve.
