- ½ cup pumpkin puree
- ½ cup peanut butter (or almond butter)

- 1 teaspoon pumpkin pie spice
- ½ teaspoon cinnamon

- ¼ cup mini chocolate chips (optional)
Instructions
- In a saucepan, combine wet ingredients: In a medium saucepan, combine pumpkin puree, peanut butter, maple syrup, and coconut oil over medium heat. Stir until melted and smooth, about 2–3 minutes.
- Add spices and oats: Remove from heat and stir in vanilla extract, pumpkin pie spice, cinnamon, and salt. Add the oats and mix until fully coated.
- Chill and serve: Let the mixture cool slightly, then fold in chocolate chips if desired. Drop tablespoon-sized portions onto a parchment-lined baking sheet, flatten, and chill in the refrigerator for at least 30 minutes or until set. Store in an airtight container in the fridge.

- You can substitute nut butter with sunflower seed butter for a nut-free version.
