  • 1 pound smoked sausage or kielbasa, sliced into ½-inch rounds
  • 1 medium yellow onion, chopped

  • 4 cups green cabbage, chopped
  • 2 medium carrots, peeled and sliced
  • 2 medium potatoes, diced
  • 1 (14.5-ounce) can diced tomatoes, with juices
  • 4 cups low-sodium chicken broth
  • 1 teaspoon paprika
  • ½ teaspoon dried thyme
  • Salt and black pepper, to taste
  • 2 tablespoons chopped fresh parsley, for garnish


Instructions

  1. Cook Sausage: In a large pot, heat olive oil and brown the sausage. Set aside.
  2. Sauté Aromatics: In the same pot, cook onion until soft, then add garlic.
  3. Add Vegetables: Stir in cabbage, carrots, and potatoes. Pour in tomatoes and broth.
  4. Season and Simmer: Add paprika, thyme, salt, and pepper. Simmer covered for 25–30 minutes.
  5. Final Touches: Return sausage to pot, simmer uncovered for 5 minutes. Adjust seasoning and garnish with parsley.
