Pie Crust:

Filling:
- 4 large eggs
- 4 slices cooked bacon, chopped
- 1/2 cup shredded cheddar cheese
- 2 tablespoons milk
- 1 tablespoon butter, melted
- Salt and pepper to taste
- 1 tablespoon chopped chives (optional)
For Assembly:
- 1 egg, beaten (for egg wash)
Instructions
- Preheat and Prep: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper. Unroll the pie crust and cut into 8 equal rectangles.
- Prepare Filling: In a bowl, whisk together the eggs, milk, salt, and pepper. Scramble the mixture in a skillet over medium heat until just set. Remove from heat and stir in chopped bacon and shredded cheese.
- Assemble: Place 4 crust rectangles on the prepared baking sheet. Spoon the egg mixture evenly onto each, leaving a border. Top with remaining crust rectangles, pressing the edges with a fork to seal.
- Bake: Brush tops with egg wash. Bake for 20–25 minutes until golden brown. Cool slightly before serving. Optional: sprinkle with chopped chives.
