Vegetables

- 1 cup Peas
- 1 cup Diced Bell Peppers (Any color bell pepper can be used.)
- 1 handful Green Onions, chopped (For garnish.)
- 2 cloves Garlic, minced (Sauté until fragrant.)
Egg and Seasoning
- 2 large Eggs (Beaten and scrambled.)
- 3 tablespoons Low-Sodium Soy Sauce (Essential for flavor.)

Instructions
- Prepare Ingredients: Peel and devein the shrimp if needed, cook and cool the rice beforehand, and finely dice the carrots, bell peppers, and green onions. Mince the garlic cloves as well.
- Heat Pan and Oil: Warm a large wok or non-stick skillet over medium-high heat and add the sesame oil. Let it heat until shimmering to release its aroma.
- Sauté Garlic: Add the minced garlic to the hot oil and stir for about 30 seconds until it becomes fragrant but not burnt.
- Cook Shrimp: Add the shrimp to the pan and cook for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the pan and set aside to avoid overcooking.
- Stir-Fry Vegetables: Add the diced carrots, peas, and bell peppers to the pan and stir-fry for 3-4 minutes until they are tender but still crisp.
- Scramble Eggs: Push the vegetables to one side of the pan. Pour in the beaten eggs and scramble until just set, then combine with the vegetables evenly.
- Add Rice: Break up any clumps in the cooked rice and add it to the pan. Stir-fry for about 5 minutes until the rice is heated through and well mixed with the veggies and eggs.
- Season Rice: Pour the low-sodium soy sauce over the rice mixture and stir thoroughly. Taste and adjust the seasoning with salt and pepper as needed.
- Combine Shrimp: Return the cooked shrimp to the pan and gently fold it into the rice mixture. Cook together for an additional 2 minutes to fully combine flavors.
- Garnish and Serve: Remove the pan from heat and sprinkle the chopped green onions over the fried rice before serving hot.
