  • 1 cup Peas
  • 1 cup Diced Bell Peppers (Any color bell pepper can be used.)
  • 1 handful Green Onions, chopped (For garnish.)
  • 2 cloves Garlic, minced (Sauté until fragrant.)

Egg and Seasoning

  • 2 large Eggs (Beaten and scrambled.)
  • 3 tablespoons Low-Sodium Soy Sauce (Essential for flavor.)
  • 1 tablespoon Sesame Oil (Add at the end for flavor.)
  • Salt (To taste.)
  • Pepper (To taste.)


Instructions

  1. Prepare Ingredients: Peel and devein the shrimp if needed, cook and cool the rice beforehand, and finely dice the carrots, bell peppers, and green onions. Mince the garlic cloves as well.
  2. Heat Pan and Oil: Warm a large wok or non-stick skillet over medium-high heat and add the sesame oil. Let it heat until shimmering to release its aroma.
  3. Sauté Garlic: Add the minced garlic to the hot oil and stir for about 30 seconds until it becomes fragrant but not burnt.
  4. Cook Shrimp: Add the shrimp to the pan and cook for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the pan and set aside to avoid overcooking.
  5. Stir-Fry Vegetables: Add the diced carrots, peas, and bell peppers to the pan and stir-fry for 3-4 minutes until they are tender but still crisp.
  6. Scramble Eggs: Push the vegetables to one side of the pan. Pour in the beaten eggs and scramble until just set, then combine with the vegetables evenly.
  7. Add Rice: Break up any clumps in the cooked rice and add it to the pan. Stir-fry for about 5 minutes until the rice is heated through and well mixed with the veggies and eggs.
  8. Season Rice: Pour the low-sodium soy sauce over the rice mixture and stir thoroughly. Taste and adjust the seasoning with salt and pepper as needed.
