Sauce:

  • 2 tablespoons vegetable oil
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup hoisin sauce
  • 1/4 cup rice vinegar
  • 1/4 cup brown sugar
  • 2 tablespoons ketchup
  • 2 teaspoons minced garlic
  • 1 teaspoon grated fresh ginger
  • 1/41/2 teaspoon crushed red pepper flakes (to taste)
  • 2 tablespoons cornstarch mixed with 2 tablespoons water (for thickening)

Instructions

  1. Prepare Chicken: Season chicken with salt and pepper, coat in cornstarch.
  2. Sear Chicken: Brown chicken in oil in a skillet, then transfer to slow cooker.
  3. Make Sauce: Whisk together soy sauce, hoisin sauce, rice vinegar, brown sugar, ketchup, garlic, ginger, and red pepper flakes. Pour over chicken.
  4. Cook: Cover and cook on low for 4 hours or high for 2 hours.
  5. Thicken Sauce: Stir in cornstarch slurry in the last 15–20 minutes of cooking.
