Instructions
- Prepare the filling: In a mixing bowl, combine the shredded chicken, softened cream cheese, hot sauce, shredded cheddar cheese, finely chopped green onions, garlic powder, and smoked paprika. Mix thoroughly until all ingredients are well incorporated into a creamy, spicy filling.
- Assemble the rolls: Lay one egg roll wrapper on a clean flat surface in a diamond shape with a corner facing you. Spoon approximately 2 tablespoons of the chicken filling onto the lower third of the wrapper. Fold the bottom corner of the wrapper over the filling, then fold in the sides tightly and roll up to enclose the filling completely. Seal the final edge with a bit of water to ensure it sticks. Repeat this process with the remaining filling and wrappers.
- Frying method: Heat about 2 inches of vegetable oil in a deep skillet or pot to 350°F (175°C). Carefully add the rolls in batches, frying for 3 to 4 minutes and turning occasionally until they turn golden brown and crispy. Remove and drain on paper towels to remove excess oil.
- Baking method: Preheat the oven to 400°F (200°C). Place the prepared rolls on a parchment-lined baking sheet. Lightly brush the rolls with vegetable oil to help crisp the exterior. Bake for 18 to 20 minutes, flipping halfway through, until golden brown and crisp.
- Optional air fryer method: For a lighter version, preheat the air fryer to 375°F (190°C). Arrange the rolls in a single layer and cook for 10 to 12 minutes, flipping halfway through the cooking time, until crispy and heated through.
- Serve: Serve the spicy chicken rolls hot with ranch or blue cheese dressing or your preferred dipping sauce for an extra burst of flavor.
