  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 8 ounces cremini or white mushrooms, sliced
  • 1 cup dry orzo pasta
  • 2 cups vegetable broth
  • 3 cups fresh baby spinach, packed
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon butter
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper to taste


Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook until softened.
  2. Stir in the garlic and cook until fragrant. Add the sliced mushrooms and cook until browned.
  3. Add the dry orzo and toast for 2 minutes. Pour in the vegetable broth and simmer until the orzo is tender.
