Cake Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup vegetable oil
- 1 cup buttermilk
- 2 large eggs
- 2 tsp green gel food coloring
- 1 tsp vanilla extract
Cheesecake Filling Ingredients
- 16 oz cream cheese, softened
- 1 cup sour cream, room temperature
- 1 cup powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour two round baking pans to ensure the cakes release easily after baking.
- Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, unsweetened cocoa powder, baking soda, and salt until well combined and aerated.
- Combine Wet Ingredients: In a separate bowl, mix together the vegetable oil, buttermilk, eggs, green gel food coloring, and vanilla extract until the mixture is smooth and uniform in color.
- Combine Wet and Dry Mixtures: Gradually add the wet ingredients to the dry ingredients, mixing gently just until combined to avoid overmixing, which could toughen the cake.
- Bake the Cakes: Divide the batter evenly between the prepared pans. Bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean. Remove from oven and allow to cool completely.
- Prepare Cheesecake Filling: While the cakes are cooling, beat the softened cream cheese in a mixing bowl until smooth and creamy. Add sour cream, powdered sugar, and vanilla extract, mixing until the filling is smooth and evenly mixed.
- Assemble the Cake: Once cakes are completely cool, spread a generous layer of cheesecake filling on top of one cake layer. Place the second cake layer on top and spread the remaining filling over the top or sides as desired.
Notes
- Ensure cakes are fully cooled before adding the cheesecake filling to prevent it from melting.
- For clean slices, chill the assembled cake in the refrigerator for at least 1 hour before serving.
- You can substitute buttermilk with a mixture of milk and lemon juice if needed.
- Green gel food coloring provides vibrant color without altering batter consistency.
- Store leftovers covered in the refrigerator for up to 3 days.
