Main Ingredients
- 1 cup semi-sweet chocolate chips
- 1/2 cup caramel chips
- 4 tbsp salted butter
- 4 cups mini marshmallows
- 3 cups Rice Krispie cereal
Instructions
- Prepare Baking Surface: Line a baking sheet with parchment paper or a silicone mat and set aside to prevent sticking.
- Melt Chocolate Mixture: In a medium microwave-safe bowl, combine chocolate chips, caramel chips, and butter. Microwave at 50% power for 1 minute. Stir and continue microwaving in 30-second intervals at 50% power, stirring between each, until the mixture is mostly smooth and melted.
- Add Marshmallows: Add mini marshmallows to the melted chocolate mixture and microwave for 1 minute. Stir thoroughly until smooth.
- Combine with Cereal: Fold in the Rice Krispie cereal, mixing until all pieces are evenly coated with the chocolate-marshmallow mixture. Let the mixture cool for a few minutes to make it easier to handle.
- Shape Cookies: Spray your hands with nonstick cooking spray. Using a 1/4 cup measure, scoop the mixture and roll it into balls, then flatten each ball into a disc shape. Place the discs on the prepared baking sheet to harden at room temperature.
Notes
- Using nonstick spray on your hands prevents the sticky mixture from clinging and makes shaping easier.
- Allow the cookies to cool completely to set properly before serving.
- Store cookies in an airtight container at room temperature to maintain freshness.
- If desired, you can add nuts or sprinkles to customize the cookies.
