Description

Deliciously soft and sweet Strawberry Cake Mix Cookies topped with a fresh strawberry glaze, perfect for a quick and easy treat that combines the convenience of cake mix with a fruity homemade touch.

Ingredients

Scale

Cookie Ingredients

  • 1 strawberry cake mix
  • 2 eggs
  • 1/4 cup canola oil (or vegetable oil)
  • 1 teaspoon pure vanilla extract

Glaze Ingredients

  • 2 cups powdered sugar
  • 1/3 cup strawberries (chopped)
  • 1 tablespoon lemon juice (or water)

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking.
  2. Mix Cookie Dough: In a large mixing bowl, combine the strawberry cake mix, eggs, canola oil, and vanilla extract. Mix thoroughly using a fork or hand mixer until the ingredients are well incorporated and a smooth dough forms.
  3. Prepare Baking Sheet: Line a baking sheet with parchment paper. Using a cookie scoop or tablespoon, form dough balls about 1 tablespoon each and place them approximately 2 inches apart on the baking sheet to allow spreading during baking.
  4. Bake: Bake the cookies in the preheated oven for about 10 minutes, or until the edges start to lightly brown. Be careful not to overbake to keep them soft and chewy.
  5. Cool Cookies: Remove cookies from the oven and let them cool on the baking sheet to firm up slightly.
  6. Make Glaze: In a food processor or blender, combine the chopped strawberries and lemon juice, blending until smooth to create a fresh strawberry puree.
  7. Combine Glaze: Gradually mix the strawberry puree into the powdered sugar until smooth and glossy. Adjust the consistency by adding more powdered sugar if too thin, or more lemon juice/water if too thick.
  8. Glaze Cookies: Transfer the cookies to a cooling rack and spoon the strawberry glaze over the tops of each cookie evenly.
  9. Finish: Once the glaze has set and cookies have fully cooled, optionally sprinkle additional powdered sugar over the top for an elegant finish.

Notes

  • You can substitute lemon juice with water if you prefer a milder glaze flavor.
  • Chopping fresh strawberries finely ensures a smooth glaze; alternatively, use pureed frozen strawberries.
  • Do not overbake cookies to keep them soft and chewy.
  • If glaze is too thick, add water or lemon juice a teaspoon at a time to reach desired consistency.
  • These cookies store well in an airtight container for up to 3 days.
