Cookie Ingredients
- 1 strawberry cake mix
- 2 eggs
- 1/4 cup canola oil (or vegetable oil)
- 1 teaspoon pure vanilla extract
Glaze Ingredients
- 2 cups powdered sugar
- 1/3 cup strawberries (chopped)
- 1 tablespoon lemon juice (or water)
Instructions
- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking.
- Mix Cookie Dough: In a large mixing bowl, combine the strawberry cake mix, eggs, canola oil, and vanilla extract. Mix thoroughly using a fork or hand mixer until the ingredients are well incorporated and a smooth dough forms.
- Prepare Baking Sheet: Line a baking sheet with parchment paper. Using a cookie scoop or tablespoon, form dough balls about 1 tablespoon each and place them approximately 2 inches apart on the baking sheet to allow spreading during baking.
- Bake: Bake the cookies in the preheated oven for about 10 minutes, or until the edges start to lightly brown. Be careful not to overbake to keep them soft and chewy.
- Cool Cookies: Remove cookies from the oven and let them cool on the baking sheet to firm up slightly.
- Make Glaze: In a food processor or blender, combine the chopped strawberries and lemon juice, blending until smooth to create a fresh strawberry puree.
- Combine Glaze: Gradually mix the strawberry puree into the powdered sugar until smooth and glossy. Adjust the consistency by adding more powdered sugar if too thin, or more lemon juice/water if too thick.
- Glaze Cookies: Transfer the cookies to a cooling rack and spoon the strawberry glaze over the tops of each cookie evenly.
- Finish: Once the glaze has set and cookies have fully cooled, optionally sprinkle additional powdered sugar over the top for an elegant finish.
Notes
- You can substitute lemon juice with water if you prefer a milder glaze flavor.
- Chopping fresh strawberries finely ensures a smooth glaze; alternatively, use pureed frozen strawberries.
- Do not overbake cookies to keep them soft and chewy.
- If glaze is too thick, add water or lemon juice a teaspoon at a time to reach desired consistency.
- These cookies store well in an airtight container for up to 3 days.
