Scale
Main Ingredients
- 1 bag tortilla chips
- 2 cups corn kernels (fresh, frozen, or canned)
- 1 cup black beans, rinsed and drained
- 1 cup diced tomatoes
- 1/3 cup diced red onion or pickled onion
- 1/4 cup chopped fresh cilantro
- 1/3 cup crumbled queso fresco or cotija cheese
Sauce
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 lime, juiced
- 1 teaspoon chipotle powder or chipotle sauce
- 1/2 teaspoon tajÃn or smoked paprika
Optional Toppings
- Sliced jalapeños
- Shredded cabbage
- Avocado
- Hot sauce
Instructions
- Roast the Corn: Heat a dry skillet over medium heat. Add the corn kernels and cook, stirring occasionally, until they are lightly charred and smoky, about 5-7 minutes. Remove from heat and set aside.
- Prepare the Sauce: In a small bowl, whisk together the mayonnaise, sour cream, lime juice, chipotle powder or sauce, and tajÃn or smoked paprika until smooth and creamy. This will be your flavorful street corn sauce.
- Prep the Toppings: Rinse and drain the black beans. Dice the tomatoes and red or pickled onions. Crumble the queso fresco or cotija cheese.
- Assemble the First Layer: Spread a layer of tortilla chips evenly on a large serving platter or a baking sheet.
- Add Toppings: Sprinkle half of the roasted corn, black beans, diced tomatoes, and onions over the chips. Drizzle with half of the prepared creamy street corn sauce.
- Repeat the Layers: Add another layer of tortilla chips followed by the remaining corn, black beans, tomatoes, onions, and drizzle with the rest of the sauce.
- Finish and Garnish: Top with crumbled queso fresco, fresh chopped cilantro, and any optional toppings such as sliced jalapeños, shredded cabbage, avocado slices, or a dash of hot sauce to your preference.
- Serve Immediately: To maintain the best crunch and texture, serve the nachos immediately after assembling.
Notes
- For an extra smoky flavor, use grilled corn instead of skillet-roasted.
- If you prefer a spicier kick, increase the chipotle powder or add fresh jalapeños.
- The nachos are best enjoyed fresh to keep the chips crunchy; leftovers may become soggy.
- Vegan substitutions can be made by using vegan mayo, sour cream alternatives, and vegan cheese.
- Use fresh lime juice for the best bright, citrus flavor in the sauce.
