Description

This creamy and flavorful Sweet Potato Soup is a comforting vegan recipe perfect for fall. Made with tender sweet potatoes, aromatic spices, and rich coconut milk, this soup offers a warming and nutritious meal that’s easy to prepare on the stovetop.

Ingredients

Scale

Vegetables and Aromatics

  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 ½ pounds sweet potatoes, peeled and cubed
  • 1 medium carrot, peeled and chopped

Liquids and Seasonings

  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 1 cup coconut milk (full-fat or light)
  • ½ teaspoon ground cumin
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste

Garnish

  • Chopped fresh cilantro or parsley

Instructions

  1. Prepare Aromatics: Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook for 4–5 minutes until softened and translucent, stirring occasionally.
  2. Add Garlic and Ginger: Stir in the minced garlic and grated ginger and cook for another minute until fragrant, taking care not to burn the garlic.
  3. Add Vegetables and Broth: Add the peeled and cubed sweet potatoes along with the chopped carrot to the pot. Pour in the vegetable broth, stirring to combine all ingredients.
  4. Simmer Vegetables: Bring the mixture to a boil, then reduce the heat to low and simmer for 20–25 minutes, or until the sweet potatoes and carrots are very tender when pierced with a fork.
  5. Blend Soup: Remove the pot from heat and carefully blend the soup until smooth. Use an immersion blender directly in the pot or transfer the soup in batches to a countertop blender, then return it to the pot.
  6. Add Coconut Milk and Spices: Stir in the coconut milk, ground cumin, ground cinnamon, and cayenne pepper if using. Season with salt and black pepper to taste.
  7. Final Simmer: Simmer the soup gently for 5 more minutes to let the flavors meld and to heat the soup through.
  8. Serve: Ladle the soup into bowls and garnish with chopped fresh cilantro or parsley. Serve warm and enjoy.

Notes

  • For extra depth of flavor, roast the sweet potatoes before adding them to the soup.
  • Add a squeeze of fresh lime juice before serving to brighten the flavor.
  • This soup freezes well, making it an excellent option for meal prep.
