- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 ½ pounds sweet potatoes, peeled and cubed
- 1 medium carrot, peeled and chopped

- 2 tablespoons olive oil
- 4 cups vegetable broth
- 1 cup coconut milk (full-fat or light)
- ½ teaspoon ground cumin
- ½ teaspoon ground cinnamon
- ¼ teaspoon cayenne pepper (optional)

Instructions
- Prepare Aromatics: Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook for 4–5 minutes until softened and translucent, stirring occasionally.
- Add Garlic and Ginger: Stir in the minced garlic and grated ginger and cook for another minute until fragrant, taking care not to burn the garlic.
- Add Vegetables and Broth: Add the peeled and cubed sweet potatoes along with the chopped carrot to the pot. Pour in the vegetable broth, stirring to combine all ingredients.
- Simmer Vegetables: Bring the mixture to a boil, then reduce the heat to low and simmer for 20–25 minutes, or until the sweet potatoes and carrots are very tender when pierced with a fork.
- Blend Soup: Remove the pot from heat and carefully blend the soup until smooth. Use an immersion blender directly in the pot or transfer the soup in batches to a countertop blender, then return it to the pot.
- Add Coconut Milk and Spices: Stir in the coconut milk, ground cumin, ground cinnamon, and cayenne pepper if using. Season with salt and black pepper to taste.
- Final Simmer: Simmer the soup gently for 5 more minutes to let the flavors meld and to heat the soup through.
- Serve: Ladle the soup into bowls and garnish with chopped fresh cilantro or parsley. Serve warm and enjoy.
