For the Chicken:
- 1 1/2 lbs boneless, skinless chicken breasts or thighs (cut into bite-sized pieces)
- 2 tbsp vegetable oil (divided)
For the Stir Fry:
- 2 cups broccoli florets
- 1 red bell pepper (sliced)
- 1 yellow bell pepper (sliced)
- 1 cup snap peas
- 2 carrots (thinly sliced)
- 3 green onions (sliced)
- 2 cloves garlic (minced)
- 1 tsp fresh ginger (grated)
For the Teriyaki Sauce:
- 1/2 cup low-sodium soy sauce
- 1/4 cup honey
- 2 tbsp rice vinegar
- 1 tbsp brown sugar
- 1 tbsp cornstarch
- 2 tbsp cold water
- 1 tsp sesame oil
Instructions
- Prepare the Teriyaki Sauce: In a small bowl, whisk together soy sauce, honey, rice vinegar, brown sugar, sesame oil, and cornstarch mixed with cold water. Set aside.
- Cook the Chicken: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the chicken and cook for 6–8 minutes until golden brown and cooked through. Remove chicken from the pan and set aside.
- Stir Fry the Vegetables: In the same pan, add remaining oil. Add broccoli, bell peppers, carrots, and snap peas. Stir-fry for 4–5 minutes until vegetables are crisp-tender. Add garlic and ginger and cook for another 1–2 minutes.
- Combine and Serve: Return chicken to the pan. Pour in the teriyaki sauce and stir well to coat. Simmer for 2–3 minutes until the sauce has thickened and everything is heated through. Garnish with green onions and serve immediately over rice or noodles.

- You can prep the sauce and chop the veggies ahead of time for a quick weeknight dinner.
- Swap in other veggies like zucchini, mushrooms, or baby corn based on what you have on hand.
