Ready in under 20 minutes, it’s a perfect fusion meal for those craving a unique and flavorful pizza experience.

Ingredients

Scale

Pickled Onions

  • 1/2 red onion, sliced thin
  • juice of 1 lime
  • salt and pepper, to taste

Pizza Base and Sauce

  • 1 12-inch pizza dough (homemade or store-bought)
  • 1 tablespoon olive oil
  • 1/3 to 1/2 cup Sweet Chili Sauce

Toppings

  • 1 1/2 cups mozzarella cheese, divided
  • 1 cup cooked chicken or pork, shredded or cubed
  • 1/2 small zucchini, sliced thin
  • 1 small carrot, shredded
  • 1/4 to 1/3 cup cilantro, chopped

Other

  • Parchment paper

Instructions

  1. Preheat Oven: Preheat your oven to 450°F (232°C) and place a pizza stone inside if you have one to ensure a crispy crust.
  2. Pickle Onions: In a small bowl, combine the thinly sliced red onion with lime juice, salt, and pepper. Stir occasionally to let the onions pickle slightly while you prepare the rest.
  3. Roll Out Dough: Lightly flour a piece of parchment paper and roll out the pizza dough to approximately 12 inches in diameter with a rolling pin.
  4. Par-Bake Dough: Use your hands to brush about 1 tablespoon of olive oil evenly over the dough, focusing on the edges. Transfer the dough with parchment paper to the oven—place directly on the pizza stone if available or directly on the oven rack. Bake for 1 minute to partially cook the crust.
  5. Assemble Pizza: Remove the dough from the oven and place it on the counter. Spread the Sweet Chili Sauce evenly over the surface, leaving a crust border if desired. Sprinkle 1 cup of mozzarella evenly on top, then add shredded or cubed chicken or pork, zucchini slices, and shredded carrot.
  6. Add Pickled Onions: Stir the pickled onions once more and scatter them over the pizza toppings, leaving the excess lime juice behind in the bowl.
  7. Bake Pizza: Return the pizza on the parchment to the oven rack or pizza stone. Bake for about 8 minutes until the cheese melts completely and the shredded carrots begin to brown slightly.
  8. Finish and Serve: Remove the pizza from the oven, sprinkle chopped cilantro over the top, and serve hot for a fresh and flavorful meal.

Notes

  • Using a pizza stone helps create a crispier crust but is optional; you can bake directly on the oven rack.
  • Adjust the amount of Sweet Chili Sauce based on your preferred spice and sweetness level.
  • Substitute chicken or pork with tofu or vegetables for a vegetarian option.
  • Pickled onions add a tangy brightness; let them pickle while you prepare the dough to maximize flavor.
  • For a thinner crust, roll the dough slightly larger than 12 inches.
