Description

This comforting and flavorful Chicken Spaghetti casserole combines tender angel hair pasta with a creamy chicken and salsa sauce, topped with melted Mexican cheese for a deliciously cheesy finish. Perfect for family dinners, this recipe is easy to prepare and baked to golden perfection.

Ingredients

Scale

Main Ingredients

  • 8 ounces angel hair pasta (half of a 16 ounce box)
  • 2 cups chopped, cooked chicken
  • 2 (10.5 ounce) cans cream of chicken soup
  • 1 cup salsa
  • 1/2 cup sour cream
  • 1 tablespoon taco seasoning

Cheese

  • 1 cup Mexican cheese blend, divided use (1 cup mixed into casserole, 1 cup for topping)

Optional Toppings

  • Dried parsley (for topping, optional)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Spray a 9×13-inch baking dish with nonstick cooking spray to prevent sticking and make cleanup easier.
  2. Cook Pasta: Bring a large pot of water to a boil and cook the angel hair pasta according to the package directions. Once cooked, drain the pasta thoroughly to remove excess water.
  3. Mix Ingredients: Return the drained pasta to the pot. Add chopped cooked chicken, cream of chicken soup, salsa, sour cream, 1 cup of the Mexican cheese blend, and taco seasoning. Stir well until all ingredients are fully combined and coated evenly.
  4. Assemble Casserole: Pour the mixture into the prepared baking dish. Evenly sprinkle the remaining 1 cup of Mexican cheese blend over the top. Optionally, sprinkle dried parsley for color and garnish.
  5. Bake: Cover the dish with nonstick aluminum foil and bake in the preheated oven for about 25 minutes, or until the casserole is hot, bubbly, and the cheese on top is melted and lightly golden brown.
