- 15 ounces can of chickpeas/garbanzo beans (drained and rinsed)
- 1 package frozen green beans
Salad Mix
- 1/4 cup red onion (sliced thinly)
- 2 tablespoons fresh parsley (flat or curly, chopped)
Dressing
- 1/3 cup apple cider vinegar
- 2 tablespoons white granulated sugar
- 1/4 cup olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Drain and rinse beans: Drain and rinse the kidney beans and chickpeas thoroughly under cold water to remove any canning liquid and excess sodium.
- Cook green beans: Microwave the frozen green beans as per package instructions. Once cooked, transfer them immediately to cold water to stop the cooking process and maintain a crisp texture. After about a minute, drain and set aside.
- Prepare dressing: In a large bowl, whisk together apple cider vinegar, sugar, olive oil, salt, and black pepper until the sugar and salt are fully dissolved and the dressing is well combined.
- Combine salad ingredients: Add the drained kidney beans, chickpeas, cooked green beans, sliced red onion, and chopped parsley to the bowl with the dressing. Toss gently to evenly coat all ingredients.
- Chill and marinate: Cover the bowl with plastic wrap and refrigerate the salad for a few hours. While it can be eaten immediately, chilling allows flavors to meld and intensify.
