Description

This Celery and Lime Bruschetta is a fresh and vibrant appetizer featuring crunchy celery sticks combined with garlic, lime juice, and extra virgin olive oil, served atop toasted crusty bread. It’s a quick and easy dish perfect for a light snack or an elegant starter.

Ingredients

Scale

Bread

  • 4 slices of good quality crusty bread like sourdough or ciabatta, sliced 1cm (0.5″) thick, preferably slightly stale

Bruschetta Topping

  • 6 large sticks of celery
  • 1 garlic clove, peeled
  • 1 garlic clove, halved (unpeeled)
  • 4 tbsp extra virgin olive oil
  • 1 tbsp lime juice
  • 1/4 tsp salt, plus more to taste
  • Black pepper, to taste

Instructions

  1. Toast the bread: Toast the bread slices until they are golden and crisp. Once toasted, rub each slice with the halved unpeeled garlic clove to infuse a subtle garlic flavor into the bread.
  2. Prepare the celery topping: Cut the celery sticks into small pieces. In a bowl, finely chop the peeled garlic clove and combine it with the celery pieces. Add the extra virgin olive oil, lime juice, 1/4 teaspoon salt, and a pinch of black pepper. Stir everything together until well mixed.
  3. Assemble and serve: Spoon the celery and lime mixture generously over each toast slice. Adjust seasoning with additional salt and black pepper if desired. Serve immediately and enjoy this fresh and zesty bruschetta.

Notes

  • Using slightly stale bread helps achieve a crisper toast.
  • Rub the toast with unpeeled garlic before adding the topping for a milder garlic flavor without overwhelming the dish.
  • Adjust the amount of lime juice and salt to your taste for the perfect balance of tang and seasoning.
  • This bruschetta is best served immediately to maintain the crispness of the toast and freshness of the celery topping.
