Description

These Vegan Cheeseburger Wraps offer a delicious and satisfying plant-based twist on the classic cheeseburger. Featuring seasoned plant-based ground beef, melted vegan cheddar, and fresh vegetable toppings wrapped in soft tortillas, they make a perfect quick lunch or easy dinner option that’s both hearty and cruelty-free.

Ingredients

Scale

Main Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 pound plant-based ground beef
  • 1 tablespoon tomato paste
  • 1 tablespoon yellow mustard
  • 2 tablespoons ketchup
  • 1 tablespoon soy sauce or tamari
  • ½ teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 1 cup vegan cheddar-style cheese, shredded
  • 4 large flour tortillas or gluten-free wraps
  • 1 cup shredded lettuce
  • 1 tomato, diced
  • ¼ cup dill pickles, chopped
  • 2 tablespoons vegan mayo (optional)

Instructions

  1. Sauté the aromatics: Heat the olive oil in a skillet over medium heat. Add the diced onion and sauté for 3 to 4 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant.
  2. Cook the plant-based beef: Add the plant-based ground beef to the skillet and cook for 6 to 8 minutes, breaking it up with a spoon as it browns evenly.
  3. Add the seasonings: Stir in the tomato paste, yellow mustard, ketchup, soy sauce or tamari, smoked paprika, salt, and black pepper. Continue cooking for 2 more minutes to blend the flavors thoroughly.
  4. Warm the tortillas: Slightly warm the flour or gluten-free tortillas to make them more pliable for wrapping.
  5. Assemble the wraps: If desired, spread a spoonful of vegan mayo on each tortilla. Divide the cooked plant-based beef mixture evenly onto each wrap. Top with shredded vegan cheddar, lettuce, diced tomato, and chopped dill pickles.
  6. Wrap and serve: Fold in the sides of each tortilla and roll tightly to form wraps. Serve immediately warm or enjoy them cold as a convenient meal option.

Notes

  • For a crispy finish, grill the assembled wraps in a panini press or skillet until golden brown.
  • These wraps are great for meal prep and can be stored in the fridge for quick lunches.
  • You can substitute the plant-based ground beef with any vegan ground meat alternative or use crumbled cooked lentils for a whole-food version.
