- ½ teaspoon smoked paprika
- Salt and black pepper, to taste
- 1 cup vegan cheddar-style cheese, shredded
- 4 large flour tortillas or gluten-free wraps
- 1 cup shredded lettuce
- 1 tomato, diced
- ¼ cup dill pickles, chopped
- 2 tablespoons vegan mayo (optional)
Instructions
- Sauté the aromatics: Heat the olive oil in a skillet over medium heat. Add the diced onion and sauté for 3 to 4 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant.
- Cook the plant-based beef: Add the plant-based ground beef to the skillet and cook for 6 to 8 minutes, breaking it up with a spoon as it browns evenly.
- Add the seasonings: Stir in the tomato paste, yellow mustard, ketchup, soy sauce or tamari, smoked paprika, salt, and black pepper. Continue cooking for 2 more minutes to blend the flavors thoroughly.
- Warm the tortillas: Slightly warm the flour or gluten-free tortillas to make them more pliable for wrapping.
- Assemble the wraps: If desired, spread a spoonful of vegan mayo on each tortilla. Divide the cooked plant-based beef mixture evenly onto each wrap. Top with shredded vegan cheddar, lettuce, diced tomato, and chopped dill pickles.
- Wrap and serve: Fold in the sides of each tortilla and roll tightly to form wraps. Serve immediately warm or enjoy them cold as a convenient meal option.
