Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the sushi casserole.
- Prepare Sushi Rice: In a small bowl, mix rice vinegar, sugar, and salt until the sugar dissolves. Stir this seasoning mixture into the cooked sushi rice to flavor it evenly.
- Layer Rice: Spread the seasoned sushi rice evenly into a greased or parchment-lined 8×8-inch baking dish, pressing down firmly to form a solid layer. Drizzle sesame oil evenly over the rice.
- Make Vegan Topping: In a mixing bowl, combine mashed tofu or vegan cream cheese with chopped hearts of palm or jackfruit, vegan mayonnaise, sriracha, soy sauce, lemon juice, garlic powder, and onion powder. Mix thoroughly until creamy and well combined.
- Assemble the Bake: Spread the vegan topping mixture evenly over the rice layer in the baking dish. Then sprinkle the chopped cucumber, crumbled nori, and sesame seeds on top.
