Ingredients
Scale
Fritter Batter
- 1 ½ cups all-purpose flour
- ¼ cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 ½ teaspoons ground cinnamon
- ¼ teaspoon ground nutmeg
- â…” cup whole milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter, melted
- 1 ½ cups peeled and diced apples (about 2 medium apples)
Glaze
- 1 cup powdered sugar
- 2–3 tablespoons milk
- ½ teaspoon vanilla extract
Instructions
- Preheat and prepare muffin tin: Preheat your oven to 375°F (190°C). Lightly grease a standard muffin tin or line it with paper liners to prevent sticking.
- Mix dry ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, ground cinnamon, and ground nutmeg until evenly combined.
- Combine wet ingredients: In a separate bowl, whisk the whole milk, eggs, vanilla extract, and melted unsalted butter until the mixture is smooth and homogenous.
- Make the batter: Pour the wet ingredient mixture into the bowl with the dry ingredients and stir gently until everything is just combined; avoid overmixing to keep the fritters tender.
- Add apples: Gently fold in the peeled and diced apples, distributing them evenly throughout the batter.
- Fill muffin cups: Spoon the batter evenly into the prepared muffin cups, filling each about three-quarters full to allow room for rising.
- Bake: Place the muffin tin in the oven and bake for 18–22 minutes, until the fritters are golden brown and a toothpick inserted into the center comes out clean.
- Prepare glaze: While the fritters are baking, whisk together the powdered sugar, milk (start with 2 tablespoons and add more if needed), and vanilla extract in a small bowl until smooth and pourable.
- Glaze and serve: Allow the fritters to cool slightly in the pan for a few minutes. Then, drizzle the glaze over the warm fritters and serve immediately for the best texture and flavor.
Notes
- These fritters are best served warm but can be reheated in the microwave for 10–15 seconds for a quick refresh.
- Using tart apples like Granny Smith adds a more pronounced and balanced apple flavor.
- For added texture, consider mixing in chopped nuts such as walnuts or pecans into the batter before baking.
