Ingredients
Scale
Salad Ingredients
- 4 cups watermelon, cubed
- 1 medium cucumber (or English cucumber), diced and seeds removed
- ½ cup Feta cheese, diced (or 8 oz crumbled feta cheese)
- ½ cup basil (or mint), chopped
- ½ cup red onion, thinly sliced
Dressing Ingredients
- ¼ cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon honey
- ¼ teaspoon salt (or more to taste)
Instructions
- Prepare the ingredients: Cube the watermelon and dice the cucumber after removing the seeds. Thinly slice the red onion and chop the basil or mint. If using block feta, dice it; if using crumbled feta, set aside ready to mix.
- Make the dressing: In a small bowl, whisk together the olive oil, red wine vinegar, honey, and salt until well combined. Taste and adjust the salt or honey according to preference.
- Assemble the salad: In a large mixing bowl, combine the watermelon cubes, diced cucumber, sliced red onion, and chopped basil or mint. Gently toss to mix the ingredients evenly.
- Add the dressing: Pour the prepared dressing over the salad and gently toss again to ensure everything is coated nicely.
- Incorporate the feta cheese: Finally, add the feta cheese to the salad and give it a gentle toss to distribute the feta without breaking it up too much.
- Serve immediately: For best freshness and flavor, serve the salad immediately. Alternatively, chill in the refrigerator for 10-15 minutes before serving to let the flavors meld.
Notes
- Use either fresh basil or mint depending on your flavor preference for a unique twist.
- Removing cucumber seeds helps prevent excess moisture and sogginess in the salad.
- Adjust salt and honey in the dressing to balance sweetness and acidity to your taste.
- This salad is best served fresh but can be refrigerated for up to 2 hours without losing texture or flavor.
- For a vegan option, omit the feta or substitute with vegan cheese alternatives.
