Description

A light and flavorful Zucchini Noodle Shrimp Scampi recipe featuring tender shrimp sautéed with garlic, shallots, and a splash of white wine, served over fresh zucchini noodles for a healthy, low-carb alternative to traditional pasta.

Ingredients

Scale

Main Ingredients

  • 1½ lbs zucchini (spiralized into noodles)
  • 1 lb large shrimp, peeled and deveined

Cooking Fats

  • ¼ cup unsalted butter
  • 2 tbsp olive oil

Flavorings

  • 1 shallot, minced
  • 2 cloves garlic, minced
  • ½ cup white wine
  • Juice of ½ lemon
  • Salt & pepper, to taste

Garnishes

  • 2 tbsp fresh parsley, chopped
  • 2 tbsp grated Parmesan cheese (optional)

Instructions

  1. Heat fats: In a large skillet, heat the olive oil and unsalted butter over medium heat until melted and combined, creating a flavorful base for sautéing.
  2. Sauté aromatics: Add the minced shallot and garlic to the skillet and cook for 1–2 minutes, stirring frequently until fragrant and translucent but not browned.
  3. Add liquids: Pour in the white wine and lemon juice, then simmer the mixture for 2–3 minutes to slightly reduce and concentrate the flavors.
  4. Cook shrimp: Place the peeled and deveined shrimp into the skillet, seasoning with salt and pepper. Cook for 2–3 minutes on each side until the shrimp turn pink and opaque, ensuring they are fully cooked.
  5. Incorporate zucchini noodles: Stir in the spiralized zucchini noodles and cook for an additional 2–3 minutes, tossing gently to heat through without making the noodles soggy. The noodles should be tender yet retain a slight bite.
  6. Finish and serve: Remove the skillet from heat. Garnish with fresh chopped parsley and sprinkle with grated Parmesan cheese if desired. Serve immediately to enjoy the dish at its best.

Notes

  • For a thicker sauce, simmer the wine and lemon juice slightly longer before adding the shrimp.
  • Be careful not to overcook zucchini noodles; they soften quickly and can become mushy.
  • Parmesan cheese is optional but adds a nice cheesy finish if dairy is suitable.
  • Use dry white wine like Sauvignon Blanc or Pinot Grigio for best flavor.
  • To keep this dish gluten-free, ensure the white wine does not contain any additives with gluten.
